I’ve been sick for the last couple of days, so when I was flipping channels with my girlfriend and saw this recipe on the tele, I knew we had to try it. Roasted Tomatoes, fresh sprigs of Thyme, Garlic, Onion and Double Baked Potatoes… what great encouragement to getting better. Hit the jump for the full recipe.

Happy Pi Approximation Day!

Hey everyone, just wanted to say happy Pi Approximation day… as opposed to actual pi day which is March 14th. So why is today Pi Approximation day you may ask? 22nd day divded by the 7th month = 3.14. Also here is the first birthday card I received today from my co-workers.

Stuffed Tex-Peppers

So for Canada Day, I decided to make Stuffed Bell Peppers based on a recipe a co-worker had given me a while back, then mixed it up with some past experience and came up with the following recipe. They turned out great, much better than any other’s I’ve tried. I added a bit of a kick and some rice, and it really made these peppers stand out from the other stuffed pepper recipes I’ve made. Valentines Day Manicotti

For Valentines Day I decided I should make something my girlfriend had never had before. Turns out she’s never had Manicotti. I went to my family cookbook and found a great recipe from my Uncle Yvon, which involved cooking for a few hours for her. Perfect. Okay I’m going to use the snow storm we had over the weekend as an excuse for the few posts I had last week… make sense? Probably not, but let’s go with it anyway! Calgary got hit with one of the largest blizzards we’ve had in a while, last Friday. More than 1,000 accidents were reported in the first 24 hours of the storm across the city and with winds of up to 70km/h, the snow blew into drifts higher than most cars in places.
